Our smart, gentle, and humorous Joe peacefully passed away on February 03, 2018. Tremendous care and support were provided by the ICU staff at both Grand River and St. Mary’s hospitals in Kitchener. Joe leaves behind his beloved wife Dale (nee Adachi). Originally from Sudbury, Ontario, Joe was the son of deceased Earl Champlain and deceased Olive Winnibell Vaillancourt (Lynch), and brother to Valerie Chaloux Joe and Dale met at Bell Canada and in 2006, moved to Waterloo where they retired. Often asked why, after 30 years, they were inseparable, they felt they simply had fun learning about the world together. Politics, history, digital developments, sports, and writing, were only some of Joe’s interests. Joe and Dale often mock challenged each other and golf members, for example, often took sides to cheer on their favorite. Joe did the digital design work for his mother-in-law, Pat Adachi, who published a 2004 book on the Asahis. In 2011, at the young age of 72, this renaissance man earned a second BA (political science) from Wilfrid Laurier University and professors encouraged him to pursue graduate work. The neighbourhood kids lovingly nicknamed him Chip and most recently, Chip and Dale signed up for a course on artificial intelligence. Others suggested he start up his own bakery. Ultimately, Joe loved his everyday life with Dale and per his wishes, was cremated without ceremony. In lieu of flowers, please continue to exercise mind and body and consider making a donation to a learning institution of your choice.
